The Best Peanut Butter Cookies

This was passed to me by a cycling buddy and makes a great snack to stick in your cycling jersey pocket and if you’re a peanut butter fan you’ll love this.

The cookies are considerably higher in protein, monounsaturated fats, fibre, vitamins and minerals than conventional cookies. 

I also added sultanas to the recipe because I like them. !!

Ingredients Makes 12

125g peanut butter

70g dark brown sugar

70g butter or dairy-free spread

75g porridge oats

75g white plain flower

50g sultanas

1  Preheat the oven to 190c/170c fan / Gas mark 3 and line a baking tray with baking paper

 Soften the butter and place all the ingredients in in food processor and process on high speed for about a minute until you have a smooth, fairly stiff dough. 

3  Form mixture into small walnut sized balls and place on the baking tray and then flatten lightly with your hand. Bake for approximately 12 minutes until light golden. Cool for a few minutes before transferring to a wire rack.
