Cyclists, Let Them Eat Cake

Part of the reason I enjoy the cycle club run is the coffee stop, a chance to chat with fellow riders over a cup of coffee and a wedge of cake. Cyclists quickly become connoisseurs of all things cake purely on the basis of providing an energy boost for the ride home.

I came across this recipe which is by “Cake” standards a healthy option, with no sugar, using the natural sweetness of bananas, blueberries and maple syrup. I was not really sure if this would work but in the interest of fellow cyclists I felt it my duty to give it a try, I was not disappointed.

Coconut Oil, Blueberry and Banana Bread.

 

Ingredients

3 or 4 very ripe bananas
1 egg
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
50ml melted coconut oil
3 – 4 tablespoons maple syrup
200g plain flour (or 175g spelt flour for wholegrain option)
1 teaspoon bicarbonate of soda
100g blueberries

Method

In a mixing bowl, mash the bananas, stir in the melted coconut oil, egg, vanilla extract and maple syrup. In a separate bowl mix together the flour, bicarbonate of soda and cinnamon.
Sieve the dry ingredients into the wet and stir until all the ingredients are combined. Finally fold in the blueberries .

Place the batter in a greased and lined 2lb loaf time and bake at 180C (fan oven) for 50 minutes, or until a knife comes out clean.
